Have you used both AWS and GCP's offerings for managed Kubernetes? What's your experience been like? Asking as someone who's had extensive experience with GKE, and interested in learning EKS. My experience with GKE has been mostly positive, identity and auth is something that I've struggled with though, also persistent workloads are hard to maintain.

On both EKS & GKE you will not see much differences between them except k8s cluster infrastructure setup. GKE has extra features. Also it depends on your experience and what services you plan to use on both cloud providers and how much are you familiar with AWS or GCP services. Also you need to compare the cost as well. We have moved off openstack to AWS EKS couple years ago. Transitioning was smooth though, We haven’t experienced any problems so far and all services and features we need are available on aws.
