I’m planning on quitting my job and I have about 100k on RSU soon to be vested. I tried to push my start date at the new company as much as possible, enough to hit my vesting date, but the new employer refused to push that far. I have enough PTO to use in order to start working at the new company while still being employed at my current company until I hit the vest date. My current manager may be cool with the idea, but the new company’s contract says I can’t be employed at another place while working for them. How likely is they could find out I’m still employed at my current company (for the first two weeks)? #engineering #software #swe #hr

Risky. If the new company involves consulting it's very possible they'll rerun your background, which does turn up start and end dates. This also applies to any future companies you apply to.
