When I workout intensely and stuff my face with chicken breast and broccoli, I look great with a sculpted physique, but I feel like crap. Conversely, when I eat and workout normally, I mentally feel good, but my body goes back to a dad bod.
You are not doing either well so that is the problem. I wonder how can you come to this conclusion by swinging from sculpted physique to dad bod.

Because they are on peds which mess up your hormones. I really doubt that you ever had sculpted physique as you said you did because to get there you will have to go through the process which is long and hard you will defenitely learn what is naturally possible and what isn’t
You also need fats. Stick some avocados and salmon in there
You seem to think the only way to eat healthy is with bland, repetitive food The issue is your lack of imagination, and laziness to not look up healthy and good tasting recipes
