I set the input volume to minimum in Mac Sound settings. This saved me a few times when I was magically somehow unmuted in Zoom, while my wife was talking to me or I was getting a phone call during group meetings like Allhands or Sprint planning. But, on my current employer's macbook, it seems the input volume is always reset to 75%-ish, every now and then. Something shady is happening.

Meeting host can unmute you, but your Mac cannot change your input volume by default - at least not the input volume within your macOS settings menu.

I encountered similar thing, whenever I try to increase screen lock time it always resets to default 10 minutes.
That could be due to your employee account group policy, which is a setting that can be set up via Microsoft AD or equivalents for macOS.

Creator of meeting has authority to mute and unmute people. The unmuted state may reflect on UI only after some time of being unmuted. These features work differently on different applications. Not sure about zoom but confirm this for meet and chime. Always better to keep laptop Mike volume zero when not speaking to be on safer side
you could be accidentally pressing a button or using a gesture that could unmute your mike, if using a headphone. Has happened to me in the most awkward times.
