I’m burnt out and hate my job. I have a EB2(India) GC EAD( EAD expires next year summer and renewal was filed already, no chance of becoming current in even 5the next years) but currently working on H1B. I want to resign and take some time to clear my head and then start preparing for interviews. Is that going to be a career/immigration suicide?

No, don't do that without an offer. H1B revocation (MS will have to do that, it's mandatory) will trigger an alert with USCIS and you will get an RFE to continue your EAD asking for a new job offer, pay stubs, etc. I know it the bad way.
But EAD is based on his pending i485 application? He just needs a job offer at the time the i485 is adjudicated no? I am surprised this will be an issue. My advise is pay $250 and take a consult from murthy law firm specific to your case. I promise you it will be the best $250 you have spent this year.
Well, the primary application is an employment-based i-140. So GC application is also based on employment. I was unaware of this, struggling with RFE now to prove the job continuity.
Do it man nothing is bigger than mental piece tbh!
